When the First Born was young, we had a really hard time getting him to eat much of anything. Waffles and milk shakes became a regular thing for him just so that we could get some calories and other nutrients into him. During this difficult time, we discovered some wonderful smoothies that he would enthusiastically consume.
Mango Lassi:
2 ripe mangos, diced
2 cups of whole milk plain yogurt, or fat free depending on your diet needs
3-4 T sugar depending on the sweetness of your mangos, more or less to taste.
1/2 cup of milk, or more depending on how thick you would like your drink, add more as necessary after blending.
Place all of the ingredients into a blender and blend until smooth. Sprinkle with crushed pistachio nuts if desired.
Orange Julius:
1/4 to 1/2 can of orange juice concentrate
1 c milk (whole or non fat depending on your dietary needs)
1 or 2 scoops of orange sherbert or vanilla ice cream
1 t vanilla
Place all of the ingredients into a blender and blend until smooth, add more milk or ice cream to create the consistency you would like.
Note: this can be made low fat by substituting the ice cream for ice cubes and adding some water as well as the milk.
Spiced Carrot & Apple Cake Smoothie:
3 cups of steamed carrots, be sure that they are cool
1 small apple, peeled and cored
1 small container (individual serving size) of apple sauce
2-3 cups of a good apple juice
1/2 t cinnamon
1/4 t ground nutmeg
a pinch of ground cloves
a pinch of ground all spice
2 handfuls of ice cubes
Place everything in a blender and blend until smooth.
Thanks for the ideas! My daughter went thru this super picky stage where a smoothie was basically her only form of nutrition. I'd add in veggies and protein powder and call it a meal. She is a better eater now, thankfully, but she still loves smoothies. :)

ReplyDeleteThat one is one of my own creations. I always use apple sauce when I make my spiced carrot cake so I decided to use those flavors in a smoothie and my kids adore it! I hate cooked carrots but I even enjoyed it! :o)
